LEMON TART WITH LIMONCELLO CREAM


LEMON TART

The pastry:
125 g/4.5 oz butter, room temperature
90 g/3 oz caster sugar
1 egg
250 g/9 oz cake flour
pinch of salt
ice water

The filling:
2 eggs
4 egg yolks
180 g/6.4 oz caster sugar
1¾ cup/426 ml full cream
5 tablespoons/75 ml lemon juice

The garnish:

icing sugar for sprinkling
1 cup/250 ml fresh cream
1 teaspoon/5 ml Limoncello

Limoncello, and Italian liqueur, mainly produced in the southern parts of Italy, has a strong lemon flavor without the sourness or bitterness of pure lemon juice. Traditionally, it is made from the zest of Sorrento lemons using the zest, or peels without the pith, and is steeped in a neutral spirit until the oil is released. The resulting yellow liquid is then mixed with simple syrup. Varying sugar to water ratio and temperature will affect the clarity, viscosity, and flavor.

Heat the oven to 190°C/374°F and grease a tart pan with a loose bottom of about 20 cm/7.8 in diameter.

In a processor, cream the butter and sugar, then add the egg. Mix well, then add the flour and salt and mix. The dough should be soft and pliable, but if for some reason it feels too dry, add a few drops of ice water. Roll the pastry into a flat disk and roll up in plastic film. Refrigerate for about 30 minutes.

On a lightly floured surface, roll out the pastry to about 4 cm/0.15 in thickness and line the tart pan with it. Cover the pastry with parchment paper and fill it with baking beans, then bake blind for about 15 minutes. Remove the baking beans and paper and bake for 5 minutes longer. The pastry should be a light golden color.

Lower the oven temperature to 140°C/175°F.
Whisk the eggs and sugar until well blended, then add the cream and the lemon juice and stir to mix well. Strain the mixture into a container with a spout. Place the tart on a baking tray and place halfway into the oven. Carefully pour the filling into the tart shell and slowly move the baking tray to the center of the oven. Bake for 50 minutes. The filling should have set but still wobbly. Remove from the oven and cool completely. Carefully remove the cooled tart from the pan. If you prefer, sprinkle icing sugar over the whole tart, otherwise leave it as is.

When cutting the tart, dip the knife into hot water and use soft pressure.

Whip the cream with the Limoncello and put a blob on each plate.

Mille-feuille of black cherries and Kirsch liqueur


It is important not to put too much cream on the pastry as it will run over the sides and look messy. Rather serve extra cream on the side if you feel the need.

MILLE FUEILE

The pastry:
300 g/10.5 oz puff pastry
icing sugar for dredging

The filling:
2 cups/500 ml full cream
2 tablespoons/30 ml Kirsch liqueur
icing sugar, to sweeten
1 x 425 g/15 oz can pitted black cherries
1 tablespoon caster sugar (optional)

The syrup:
the reserved syrup from the can of cherries
sugar to taste
1 tablespoon/15 ml Kirsch liqueur

For variation, use other berries, mashed bananas or mixtures of fruit and chopped nuts.

Preheat the oven to 220ºC/428°F.
Roll the pastry out onto a floured surface to a 3 mm/⅛ in thickness. Place the rolled out pastry on to a lined baking tray, then cut 12 x 13 x 8 cm (4.7 x 5.1 x 3 in) rectangles. Prick with a fork, dredge generously with icing sugar and chill in the freezer for five minutes.  Then remove from the freezer and bake in the oven for 10-12 minutes, or until the pastry begins to brown on top. Cover the pastry rectangles with a piece of greaseproof paper and place another baking tray on top. Return to the oven and bake for a further 7-10 minutes then set aside to cool on a wire rack.

Whip the cream until it forms stiff peaks, fold in 2 tablespoons/30 ml of the Kirsch liqueur and add icing sugar to taste. Drain the cherries and reserve the liquid. Cut the cherries in half and set aside.

In a small saucepan, heat the reserved syrup from the cherries, add the sugar (if you wish) and reduce until it becomes syrupy. Add the rest of the liqueur and set aside to cool.

When ready to serve, spread the cream over 1 of the 4 rectangles, leaving about 1 cm/0.4 in then fill the surface with the half cherries, pressing it down into the cream. Place another rectangle on top of each of the first ones, and repeat with the cream and cherries. Top with the final rectangle, sprinkle over the grated chocolate and drizzle the syrup around. Serve immediately.

Layered filo pastry tart baked with a mixture of nuts, spices and rosewater syrup


This tart resembles the traditional Greek dessert, Baklava.  It will last for up to 4 days, covered and at room temperature. Use any mixture of nuts that you prefer, and if rosewater is not available, spray over some sweetened apple juice.

LINE

BAKLAVA
2 teaspoons/10 ml cinnamon
1 tablespoon/15 ml allspice
3 cloves
½ teaspoon/3 ml cardamom
¼ cup/60 ml water
1 teaspoon/5 ml rose water
450 g/1 lb filo dough, thawed
225 g/8 oz butter, melted
170 g/6 oz almonds, blanched and chopped finely
170 g/6 oz walnuts, chopped finely
170 g/6 oz pistachios, chopped finely
2/3 cup sugar

For the syrup:
1 cup/250 ml honey
1 cup/250 ml water
1 cup/250 ml sugar
the juice of half a lemon
1 cinnamon stick
1 piece fresh orange peel
pistachios, finely chopped for sprinkling (optional)

In a spice grinder, grind the cinnamon, allspice, cloves and cardamom very fine.

Mix the water and rose water and, for convenience, pour it into a spray bottle and set aside.

Cut the filo pastry to fit into a baking pan 33 x 23 x 5 cm/13 x 9 x 2 in. Greece the pan with butter, then brush each of 8 of the cut sheets with the melted butter and place on top of each other on the bottom of the pan.

Mix the almonds, walnuts and pistachio with the sugar and spread a third of this mixture over the top sheet, then spray thoroughly with the rose water. Repeat this process two more times, finishing with the last layer of filo. Brush the top generously with butter, then place in the preheated oven to bake for 30 minutes. Remove pan from the oven and cut into 24 squares (roughly 55 x 58 mm/2.2 x 2.3 in).

Return the pan to the oven and bake for another 30 minutes. Remove the pan from the oven, and place on a cooling rack to cool down for 2 hours before pouring over the syrup.

Meanwhile, prepare the syrup in a saucepan by bringing all the ingredients except the pistachios, to a boil, stirring occasionally until the sugar has dissolved. Boil for about 10 minutes, then remove from the heat and discard the orange peel and cinnamon stick.
After the tart has cooled down, make sure the cut lines go right through. Pour the hot syrup over the whole of the tart. Sprinkle some finely chopped pistachios over, then leave the pan uncovered to rest for at least 8 hours.

Mixed berry and ricotta cream tarts

MIXED BERRY TART

The pastry:
185 g/6.5 oz plain flour
95 g /3.4 oz ground almonds
40 g /1.4 oz icing sugar
125 g /4.4 oz butter, chopped
1 free-range egg, lightly beaten
pinch of salt

The filling:
200 g/7 oz ricotta (make your own)
seeds of 1 vanilla bean
2 free-range eggs
160 g /5.6 oz caster sugar
½ cup/125 ml fresh cream
60 g/2 oz fresh raspberries
80 g /3 oz fresh blueberries
(frozen berries can be used if fresh ones are not available – defrost and drain them before using)

The sauce:
30 g/1 oz caster sugar
2 tablespoons/30 ml cold water
½ teaspoon/3 ml liquid glucose
250 g/9 oz ripe strawberries, hulled
1 teaspoon/5 ml bottled green peppercorns, rinsed and drained
½ teaspoon/3 ml lemon juice

The garnish:
½ teaspoon/3 ml poppy seeds (optional)
apricot glaze (optional)
the strawberry sauce (recipe above)

Sift the flour into a large bowl, then add the almonds and icing sugar. Rub the butter into the flour with your fingertips until it resembles fine breadcrumbs. Add the egg and mix with a flat-bladed knife, using a cutting action, until the mixture comes together in large crumbs.  Press together into a ball, cover with plastic film and refrigerate for 30 minutes.

Preheat the oven to moderate 180°C/356°F.

Grease six 8 cm/0.3 in (3 cm/0.1 in deep) tart tins with loose bases. Divide the pastry into six and roll each piece out between two sheets of baking paper to fit the base and side of the tins. Ease the pastry into the tins, gently press into shape and trim the edges. Prick the bases with a fork, then refrigerate for 30 minutes.

Bake blind for 8-10 minutes, then remove the paper and beads from the baked pastry.

This pastry can also be made in a food processor, but care should be taken not to over process the mixture which will result in tough and hard pastry.

Meanwhile, process the ricotta, vanilla, eggs, sugar and cream in a food processor until smooth. Divide the berries and filling amongst the pre-baked tart shells and bake for 25-30 minutes, or until the filling is just firm around the edge but still wobbly in the center.

Let it cool to room temperature, then lift the tarts out of the tins.

Make the syrup by dissolving the sugar, water and glucose in a saucepan and bringing it to a boil over low heat.  Stir continuously and boil for 5 minutes.  Remove from the heat, strain and leave to cool. Process the strawberries and peppercorns, then add the syrup and lemon juice and strain again.

Glucose is very sticky but an easy way to measure it is with either a heated spoon or a spoon dipped in oil. The glucose will simply slip off the spoon. Do the same with honey and corn syrup.

To serve:
When ready to serve, place a tart in the center of each serving plate and pour the sauce around.

Marachino cherries and marzipan tarts


If this recipe yields too many tarts for one sitting, it is better to half the recipe as they are at their best when still slightly warm. But it should be no problem. They are delicious and small enough to have more than one, two, three ….

Makes 30

CHERRY MARZIPAN

45 pitted Marachino cherries, drained thoroughly on kitchen paper (it is available in jars at any supermarket)
150 g/ 5 oz marzipan (make your own)
2 sheets puff pastry (use bought pastry but see recipe to make your own)
½ cup/125 ml almonds, finely chopped
icing sugar for dusting

Preheat the oven to 180°C/350°F.

Line two baking trays with parchment paper. Roll out the puff pastry to 5 mm/0.2 in thick. Use a 5 cm/2½ in pastry cutter and punch 30 rounds from the rolled pastry. Carefully place each round on the two prepared baking trays and prick each one all over with a fork. Cover them with another sheet of parchment paper, then two more baking trays on top of each baking tray. (If you don’t have enough baking trays, do this in two sessions.) This is to weigh the pastry down preventing them from rising during the cooking. Bake for 10 minutes then remove from the oven. Lift off the extra trays and parchment paper and leave the pastry to cool.  

Roll out the marzipan to about 2 mm/0.7 in and punch 30 rounds with pastry cutters slightly smaller than 5 mm/0.2 in and place on top of the cooled pastry discs. Cut each cherry in half and place 5 halves on top of each marzipan disc. Put the trays back in the oven and bake for another 10 minutes. Remove from the oven and when they have cooled down slightly, sprinkle over the icing sugar and the chopped almonds.

Stuffed beef fillet rolled in pastry and served with cauliflower cream and sweet peas


This dish is a variation of the Beef Wellington in a way.  It is, however, fabulous for dinner parties and is always enjoyed by all.

BEEF WELLINGTON

Serves 4

The beef roll:
450 g/1 lb mixed mushrooms
salt
8 green asparagus, trimmed and blanched in salted water
8-10 slices prosciutto
2 tablespoons/30 ml olive oil
700 g/1.6 lbs beef fillet, trimmed
2 tablespoons/30 ml wholegrain mustard
450 g/1 lb puff pastry
1 eggs, whisked, for glazing

The sauce:
1 cup/250 ml red wine
1½ cup/375 ml beef stock, heated
the reserved mushroom paste
½ cup/125 ml full cream

The cauliflower cream:
1 tablespoon/15 ml butter
1 medium size cauliflower, cut into small pieces
1 cup/250 ml full cream
1 tablespoon/15 ml crème fraîche
¼ teaspoon nutmeg, grated
2 teaspoons/10 ml lemon juice
salt and freshly ground black pepper to taste

The peas:
2 cups/500 ml peas (fresh or frozen and defrosted)
1 tablespoon/15 ml butter
1 tablespoon/15 ml sugar
salt
2 teaspoons/10 ml mint, finely chopped

  • In a food processor, chop the mushrooms until a rough paste forms. Transform to a non-stick frying pan and dry fry the mushrooms until all its natural moisture has evaporated. Season and put aside to cool.
  • Cut the beef horizontally but not right through. Stop about 3 cm/1¼ in away from the edge.
  • Fold the fillet open like a book and place between two sheets of plastic film.
  • With a mallet, lightly bash the meat all over to get an even thickness.
  • Sprinkle with salt on the cut side then spread the cooked mushrooms evenly all over (reserving 2 tablespoons/30 ml for the sauce) , leaving a small space on the edges all round.
  • Cut the asparagus tips off and set aside.
  • Place the stems in the center horizontally, then roll up the beef. Secure with a skewer or toothpicks.
  • Heat the olive oil in a frying pan until very hot and quickly sear the steak all round.
  • Set aside to cool.
  • When the meat has cooled almost completely, roll out a large piece of plastic film and place the prosciutto alongside each other to more or less the size you will need to cover the fillet all round.
  • Remove the skewers or toothpicks from the meat, then spread mustard all over the outside.
  • Place the meat in the center of the prosciutto and with the help of the plastic film, roll the fillet with the prosciutto into a neat roll.
  • Twist the ends of the plastic film to prevent it from splitting open and refrigerate for at least 20 minutes.
  • Preheat the oven to 200°C/390°F and grease a baking tray.
  • When ready to cook, roll out the pastry into a rectangle, unwrap the beef carefully and place in the center of the puff pastry.
  • Brush the pastry edges all round with the egg wash then fold it over the beef and seal.
  • Trim the ends of the pastry and with the help of the egg wash, seal the ends neatly.
  • Paint the pastry all over with the egg wash and lift the roll onto the baking tray.
  • Refrigerate for about 15 minutes.
  • Remove the roll from the refrigerator and brush again with the egg wash.
  • Lightly score the top of the pastry and place in the oven to bake for 15 minutes.
  • Turn the baking pan around and lower the heat to 180°C/356°F. Bake for 10 minutes more.
  • Remove from the oven and let it rest for at least 15 minutes before slicing.
  • Heat the pan in which you seared the beef and deglaze it with the red wine.
  • When all the alcohol has evaporated and the pan is nearly dry, add the stock and reduce to half.
  • Add the mushroom paste and cook until the sauce has reduced to a half.
  • Stir in the cream and let it cook until it thickens.
  • Strain, season with salt and freshly ground black pepper and pour back into the pan to keep warm.
  • After the beef roll has rested and you are ready to cut it, pour the juices that leaked out of the roll into the sauce and mix.
  • Meanwhile, for the cauliflower, bring water in a saucepan to the boil and add the butter and cauliflower. (The water should only come halfway up the cauliflower).
  • Cook until the cauliflower is tender. (The water should have reduced down to about half).
  • Pour all the content of the saucepan (and the water) into a food processor and blend until smooth. (It should be the consistency of thick whipped cream).
  • Add the cream, crème fraîche, nutmeg, salt and pepper and blend until smooth.
  • Add 1 teaspoon/5 ml of lemon juice and taste, then add more if required.
  • Pour back into the saucepan and keep warm until ready to serve.
  • Melt the butter in a saucepan and add the peas, a pinch of salt and 1 teaspoon/5 ml of sugar.
  • Let it heat through over low heat until the sugar has melted.
  • Add the chopped mint and set aside in a warm place until ready to serve.

Chicken pate in pastry with tomato salad and a creamy salad dressing


Serve with tomato salad and a creamy salad dressing.

BLOCK HORIZONTAL LINE

This pate tastes better when it has cooled down. Leave it uncovered for the pastry to stay crisp, until it gets to room temperature.

CHICKEN PATE

The filling:
1.5 kg/3.3 lbs free-range chicken
1 teaspoon/5 ml salt
a pinch each of ground black pepper, ground cloves, ground ginger, ground nutmeg
4 tablespoons/60 ml parsley, finely chopped
6 cloves of garlic, finely chopped
2 free-range eggs, lightly beaten
2 cups/500 ml white wine

The pastry:
500 g/17.6 oz short crust pastry
150 g/5.2 oz puff pastry
1 free-range egg yolk

The jelly:
20 g/0.7 oz powdered gelatin
1¼ cup/310 ml chicken stock
1 tablespoon/30 l Madeira
season to taste

The salad:
2 cherry tomatoes, peeled, cut in half
1 spring onion, shredded
a mixture of herb leaves

The dressing:
4 tablespoons/60 ml Japanese mayonnaise
2 teaspoons/10 ml rice wine vinegar
2 teaspoons/10 ml caster sugar
5 tablespoons/75 ml chive oil
balsamic vinegar glaze (optional)

Debone chicken and cut into thin strips then mix with the rest of the ingredients. Place in the refrigerator overnight to marinate.

Preheat the oven to 190°C/374°F.
Roll out the short crust pastry to a thickness of just over 3 mm/0.1 in and line a greased terrine dish. Spoon in the meat filling to the top of the dish and coat the pastry around the top edges with the egg yolk.

Cover the filling with the puff pastry, rolled out to 4 mm/0.2 in thickness, and press the edges firmly on to the edges of the short crust pastry.  Coat the puff pastry with the egg yolk and cut two holes in the center of the pastry (to allow the steam to escape). Insert two pastry funnels or two pieces of foil rolled-up. Bake in the preheated oven for 50 minutes.

Meanwhile, heat a little of the chicken stock and add the gelatin powder, stirring until dissolved. Add the rest of the chicken stock and the Madeira and heat through. Season to taste and strain the liquid. When the pate is cooked, remove from the oven then evenly pour the liquid through both the openings into the pate.

For the salad, mix together all the ingredients and season well.
For the dressing, combine all the ingredients. It should be like stiff cream. If not, add more mayonnaise.

To serve:
Allow the pate to cool to room temperature and remove from the terrine mold. Slice into 4 cm/1.5 in slices and place in the center of four serving plates. Spoon the salad on the side with the mayonnaise.

Thai spiced chicken and coconut soup


This is a spicy and creamy soup and it is essential to poach the raw chicken in the broth for more flavor.

THAI  SPICED CHICKEN SOUP

The soup:
2 tablespoons/30 ml vegetable oil
2 skinless free-range chicken breast fillets, cut into narrow strips
5 cm/2 in fresh ginger, peeled and finely chopped
1 stalk lemon grass, hard outer skin removed and chopped finely
1-2 teaspoons/5-10 ml mild red chilies, finely chopped
2 cups/500 ml coconut cream
1 cup chicken stock
2 tablespoons/30 ml Asian fish sauce (also known as Nam Pla, available in well-stocked supermarkets)
lime or lemon juice to taste

The garnish:
coconut shavings
½ cup/125 ml fresh coriander leaves
sliced red chilies (optional)

In a medium sized saucepan, heat the oil and lightly fry the ginger, lemon grass and chilies, then add the coconut cream and chicken stock and bring to the boil.  Add the strips of chicken, fish sauce and lemon juice and cook for another 5 minutes. Check the seasoning.

To serve:
Pour the soup into warm soup bowls and garnish with coconut shavings, fresh coriander and extra chilies (optional).

Banana and marzipan spring rolls with cinnamon and banana liqueur


If marzipan is difficult to get where you are, see in the Glossary how you can make your own.

BANANA MARZIPAN2Serves 4

The marinade:
2 teaspoons/10 ml brown sugar
¼ teaspoon/pinch of cinnamon
1½ cup/375 ml banana liqueur
juice of 1 lemon
4 bananas, peeled

The spring rolls:
2 sheets spring roll wrappers, cut in half
1 free-range egg, lightly beaten
4 strips of marzipan, 2 cm/0.7 in wide/ 8 cm/3 in long and 2 mm/0.07 in thick
oil for deep-frying

  • Combine the sugar, cinnamon and banana liqueur in a shallow glass dish.
  • Cut the peeled bananas lengthways in half and each half in quarters, then add to the marinade and leave for 30 minutes.
  • Drain and reserve the marinade.
  • Brush the edges of each pastry sheet with the beaten egg as you go along.
  • Put a strip of marzipan between two quarters of banana and place on a sheet of pastry.
  • Roll the pastry up, folding in the sides to prevent the filling from squeezing out, and put aside under a damp cloth.
  • Repeat with the rest of the ingredients.
  • Heat the oil to about 180°C/356°F and deep-fry the spring rolls until golden, and drain on kitchen paper.
  • Keep warm uncovered.

To serve:

  • Slice each roll in half at an angle and arrange on the servings plates.
  • Pour the reserved marinade into dipping bowls and serve immediately.

Carnival fritters served with a chocolate soup


These traditional fritters are very much appreciated all around Italy during Carnival days which root back in medieval times.
BLOCK HORIZONTAL LINE
Serves 4

CARNIVAL FRITTERS

 

 

The fritters:
250 g/8 oz flour, sifted
salt
1 egg
2 egg yolks
seeds of half a vanilla pod

Once you have scraped the seeds from the vanilla pod, store it in an airtight container filled with sugar. This will provide you with vanilla flavored sugar in just a few days.

grated zest from half an orange
1 teaspoon/5 ml olive oil
2 tablespoons/30 ml milk
1 tablespoon/15 ml dark rum
25 g/0.8 oz butter, melted
oil for deep-frying
icing sugar for sprinkling

The chocolate soup:
125 g/4.5 oz dark chocolate
pinch of sea salt
1 teaspoon/5 ml instant coffee dissolved in
1 tablespoon/15 ml hot water
½ cup/125 ml Drambuie

Process the flour, salt, eggs, vanilla, orange zest, olive oil, milk and rum to form a dough. Cover in cling film and  refrigerate for 1 hour.
Roll out with a pasta machine until 5 mm thick.  Brush the entire length of the pasta sheet with butter, then fold in two.  Roll out again until it is 5 mm thick.  Repeat this process three times then cut into long strips of 1½ cm/0.6 in wide and cut each strip into 12 cm/4.7 in long pieces. Tie a loose knot with each piece, then working in small batches, deep-fry the pastry knots in the hot oil until golden all over.  Remove from the oil and place on paper towels to drain.

Combine the cream and milk in a heavy, medium saucepan and bring to a simmer over medium heat.  Add the chocolate and cook, whisking constantly until smooth, about 4 minutes.  Remove from the heat and add the liqueur.  Cover and keep warm.

To serve:
On four plates, pile a helping of the fritters off center and sprinkle generously with the icing sugar.  Place a small dipping bowl or small coffee cup next to the fritters and fill with the chocolate soup. Serve warm.
